Abstract
The dairy sector is one of the largest industrial sectors in Palestine, as it accounts for 75% of the local Palestinian market share and can contribute to global food security in a sustainable way by efficiently converting milk into ingredients and dairy products. On the other hand, it reduces the problem of unemployment because it is a relatively labor-intensive industry. Therefore, it is important to study the sustainability of this sector and its commitment to the three aspects of sustainability, namely, the environment, the economy and the society, and the extent of their impact on the organizational performance. However, the Palestinian dairy industry still faces several challenges related to sustainable development, as it consumes a lot of resources, produces a lot of waste, and harms the environment. The goal of this project is to assess the environmental, economic and social sustainability practices and study the impact of sustainability practices on organizational performance of the dairy industry in Palestine. Designing sustainability - organizational performance framework, developing a data collection tool to assess the level of sustainability practices and study the impact of sustainability practices on organizational performance in Palestinian dairy sector were included by this project. The results indicated that there is a relationship between each of the three aspects (environmental, economic and social) with organizational performance, but the aspect that has a strong and clear relationship was the economic aspect. The results also showed that the sector suffers from the problem of water consumption or reuse, because hygiene is the most critical aspect in dairy processing and milk production, dairy factories use a lot of water in their cleaning operations. Large volumes of wastewater containing volatile milk components, fats, and proteins arise, necessitating sophisticated methods such as electrocoagulation or specific filter flasks to efficiently collect and reuse the water following biological wastewater treatment. Because of their old and obsolete technology, most dairy companies in Palestine lack it.
