Abstract
 This project considered as a practical Trial to implement Food Safety Management System (FSMS) and ISO 22000 system At Al-Karawan Factory the ISO 22000 system will guarantee the improvement of the product safety and quality at the factory. In this project the focus was on Tahina production line, The first step was assessing the current situation in the factory to identify the production and hygiene levels, establishing the product description, manufacturing process description, then preparing the gap analysis report directed, which is a comparison between the current situation of the factory and the standard requirements ( PRP's and GMP's), The second step was focusing on HACCP study, which is a system for food safety to ensure the product safety that includes a twelve steps to be followed to determine all Critical Control Points (CCP) for the production line, how to monitor and control these points, and determine the corrective actions and verification procedures. The final step was developing the working procedures for both HACCP standard and management system that are related to ISO 9001 elements.   Project Objectives   The idea of this project started from the necessity to prove the Palestinian product identity in all market places, organizations whether local or international fields. Also to produce a Palestinian product which holds an international quality certification whereas realize the customer satisfaction through surveillance and control the effectiveness of safety food hazards. The main objectives of this project are:   The main objectives of this project are to help Al-Karawan Factory to comply with ISO 22000 standard To study the food safety system in the factory to know how much the ability to implement ISO 22000 system in the factory To enhance customer satisfaction through the effective control of food safety hazards including processes for updating the system Also to demonstrate its ability to control food safety hazards in order to consistently provide safe end products that meet both the requirements agreed with the customer and those of applicable food safety regulations  In Addition work to control and reduce risks in order to preserve the integrity of the product to the acceptable limits, whether the risk of physical, chemical or bacterial ,Besides to decrease the waste in all the existing sources in the plant   reduce the time required for the production and increase the quality of the products Better assurance of safe food, Harmonization of national food safety standards Improve resource, the development of the documentation process better planning and less post-operative check Increase the potential for economic growth, and development more efficient validation methods, techniques and procedures.  For businesses, the widespread adoption of ISO 22000 means that suppliers can base the development of their products and services on specifications that have wide acceptance in their sectors, This in turn, means that businesses using ISO 22000 are increasingly free to compete on many more markets around the world, which will could support the food industry in Palestine Through increased confidence in their products.   Conclusion            Comprehensive ISO 22000 system has been developed for Al_karwan factory We started studying the deep of the plant and the comparison between the required specification of the standards and requirement located on the ground in the factory. The system was developed which includes aspects of the system,HACCP system and procedures for ISO22000 that will enable the factory from the application of an effective system available for the continuity auditing and Follow up
